1large or 2 small heads of green lettuce
For the dressing:
2tbspsunflower oil
2tbsplemon juice
1pinchof salt
1tspsugar
2tbspdouble cream
1small onion
1tspchopped fresh herbse.g. parsley, chives or dill
Instructions
Prepare the lettuce
Remove outer leaves if necessary. Wash the lettuce thoroughly, spin or pat dry. Tear larger leaves into bite-sized pieces and place in a salad bowl.
Make the dressing
In a small bowl, whisk together the sunflower oil, lemon juice, salt and sugar until the sugar is fully dissolved.
Add the cream
Stir in the double cream until smooth.
Finish the dressing
Peel and finely chop the onion. Mix the onion and chopped herbs into the dressing.
Combine
Just before serving, pour the dressing over the lettuce and toss gently.
Notes
This salad pairs well as a side with pasta dishes, meat, or fish.
Oma’s Tip: For finely diced onions, halve the onion lengthwise, place flat side down, make parallel cuts without cutting through the root end, then slice finely.
