300gfloury potatoes
100gceleriac
1small leek
½bunch marjoram
1stock cubeor 500 ml broth
1tbspbutter
2slicesrye breador other brown bread
1large onion
1tbsplemon juice
100gdouble creamwhipping cream

Instructions
Peel the potatoes and celeriac, wash and cut into small cubes. Clean the leek, slice lengthwise, wash, and cut into thin rings. Rinse the marjoram, shake dry, pluck the leaves and chop finely.
Place the prepared vegetables into a soup pot, add the stock cube and 1 litre of water. Bring to the boil, then simmer gently for about 20 minutes until the potatoes and vegetables are soft.
Meanwhile, heat 2 tbsp butter in a frying pan. Toast the slices of rye bread on both sides until golden brown. Remove and cut in half. Place in soup bowls.
Peel the onion and slice into rings. Heat the remaining butter in the same pan and fry the onion rings until golden brown, stirring occasionally.
Purée the soup with a hand blender until smooth. Stir in the lemon juice and cream. Season generously with salt and pepper.
To serve, ladle the soup over the toasted bread in the bowls. Top with fried onion rings and sprinkle with chopped chives.
Notes
Grandma’s Tips
For variety, you can add other vegetables such as cauliflower, peas, or carrots, which give the soup extra flavour.
Instead of bread slices, serve with crispy white bread cubes (croutons).
Fried bacon pieces make a delicious topping if you want a heartier version.
