Instructions
Boil Potatoes and Garlic
Place chopped potatoes and garlic cloves in a large pot. Cover with cold water, add a pinch of salt, and bring to a boil. Simmer for 15–20 minutes or until the potatoes are fork-tender.
Warm Milk and Olive Oil
In a small saucepan, gently warm the olive oil and milk together (do not boil). This helps make the mash extra creamy.
Mash the Potatoes
Drain the potatoes and garlic. Return them to the pot and let them sit on the warm stove for 1 minute to steam off excess moisture. Mash using a potato masher or ricer.
Add Flavors
Pour in the warm olive oil and milk mixture. Stir in crumbled feta, lemon zest, oregano, salt, and pepper. Mash and mix until creamy and smooth. Adjust seasoning as needed.
Serve
Transfer to a serving bowl. Drizzle with a bit more olive oil and sprinkle with fresh herbs if desired.
