Ingredients
  

  • 1 kg floury potatoes e.g. Maris Piper or Yukon Gold, peeled and chopped
  • 4 cloves garlic peeled
  • 100 ml extra virgin olive oil
  • 100 ml whole milk or plant-based alternative like oat milk
  • 100 g feta cheese crumbled
  • Zest of 1 lemon
  • 1 tsp dried oregano
  • ½ tsp salt or to taste
  • Black pepper to taste
  • Optional garnish: chopped fresh parsley or basil olive oil drizzle

Method
 

Boil Potatoes and Garlic
  1. Place chopped potatoes and garlic cloves in a large pot. Cover with cold water, add a pinch of salt, and bring to a boil. Simmer for 15–20 minutes or until the potatoes are fork-tender.
Warm Milk and Olive Oil
  1. In a small saucepan, gently warm the olive oil and milk together (do not boil). This helps make the mash extra creamy.
Mash the Potatoes
  1. Drain the potatoes and garlic. Return them to the pot and let them sit on the warm stove for 1 minute to steam off excess moisture. Mash using a potato masher or ricer.
