Irresistibly Crispy Parsnip Fritters – A Comforting Classic

There is something comforting about recipes that turn simple ingredients into family favourites. These parsnip fritters are golden, crispy on the outside, soft in the middle, and full of savoury flavour. If you’ve never tried making parsnip fritters before, you’ll be surprised how easy and satisfying they are. Perfect as a vegetarian main, a hearty side dish, or even as a snack with a dip, they’re a recipe worth keeping in your collection.

Parsnips are often overlooked in the kitchen, yet they bring a subtle sweetness and nutty flavour that works beautifully when paired with onions, herbs, and a touch of mild curry powder. In this parsnip fritters recipe, grated parsnips are combined with soaked bread, eggs, and breadcrumbs to form little patties that are pan-fried until golden. The result is a plate of rustic, crispy fritters that are filling and deeply satisfying.

The Story Behind the Recipe

This dish comes straight from Grandma’s kitchen, where nothing ever went to waste and every ingredient had a purpose. Instead of discarding stale bread rolls, they were softened and added to the fritter base. The parsnips gave the fritters a sweet, earthy note, while fresh chives and curry powder lifted the flavour.

Grandma also enjoyed varying the recipe depending on the season and what vegetables were on hand. Sometimes, instead of parsnips, she used a mixture of carrots, parsley root, and celeriac. In that version, she left out the curry powder and chives, swapping them for chopped parsley and a touch of lovage. This versatility makes parsnip fritters a true staple in any traditional kitchen.

  • 2 stale bread rolls
  • 500 g parsnips
  • 1 onion
  • Salt and black pepper
  • 2 tsp mild curry powder
  • 1 bunch of chives
  • 4 eggs
  • Breadcrumbs as needed
  • 3 tbsp clarified butter or butter/ghee for frying

Tips for the Best Fritters

  1. Squeeze well – after soaking the bread, remove excess liquid so the mixture isn’t too wet.
  2. Taste test – fry one small fritter first to check seasoning before shaping the rest.
  3. Cook on medium heat – ensures they turn golden without burning.
  4. Keep them warm – place finished fritters on a tray in a low oven if cooking a large batch.

Serving Suggestions

These parsnip fritters are wonderfully adaptable. Try them:

  • With a yoghurt-herb dip or sour cream.
  • As a side dish to roast chicken, beef, or lamb.
  • Alongside a fresh green salad for a lighter meal.
  • Inside a bread roll as a quick vegetarian sandwich.

They also store well. Keep leftovers in the fridge and reheat in a pan or oven to restore their crispy edges.
