Rustic potato bake with minced meat, tomatoes, and cheese

Potato Bake with Minced Meat (Kartoffelauflauf mit Hack)

There are few things that fill the kitchen with such a comforting scent as a bubbling potato bake. Layers of golden potatoes, juicy minced meat, and melted cheese come together in a way that instantly feels like home. This dish has been part of our family table for generations — one of those recipes Grandma would prepare on a Sunday afternoon, letting it bake slowly while everyone gathered around and waited impatiently for the first slice.

What makes this Potato Bake with Minced Meat so special is its simple combination of honest ingredients and warm, rustic flavours. Thin slices of potato form the base, rich minced meat adds heartiness, and the fresh tomatoes and basil bring a light Mediterranean note. Once topped with cheese and baked until golden, the result is pure comfort — soft inside, crisp on top, and deeply satisfying.

A Dish Between Germany and the Mediterranean

Like many of Oma’s recipes, this one bridges old-fashioned German home cooking with a hint of southern sunshine. It’s humble, made from pantry staples, yet tastes like something you’d order in a cosy country inn. The white wine gives the sauce a gentle lift, and the basil rounds it off with freshness.

This bake is also wonderfully practical — you can prepare it ahead, bake it just before dinner, and it even tastes fantastic the next day. Paired with a green salad or a few slices of fresh bread, it’s a complete meal that pleases both young and old alike.

Ingredients

  • 800 g tomatoes
  • 1 small bunch of basil
  • 1 large onion
  • 2 cloves garlic
  • 7 tbsp olive oil
  • 300 g mixed minced meat beef and pork
  • Salt and pepper
  • 1 tsp dried oregano
  • 100 ml white wine
  • 800 g mostly waxy potatoes
  • 150 g grated medium-aged Gouda cheese
Also:
  • Butter for greasing the baking dish

Method

Prepare the vegetables:
  1. Blanch the tomatoes briefly, peel them, and cut into thin slices, removing the stalk ends. Rinse the basil, pat dry, and pluck off the leaves. Peel and finely chop the onion and garlic.
Cook the mince:
  1. Heat 5 tbsp olive oil in a large pan. Sauté onion and garlic until translucent. Add the minced meat and fry until crumbly. Season with salt, pepper, and oregano. Pour in the wine and let simmer gently for about 5–8 minutes.
Prepare the layers:
  1. Preheat the oven to 200°C (180°C fan). Grease a heatproof dish with butter. Peel, wash, and thinly slice the potatoes. Layer alternating rows of potato slices, tomato slices, minced meat, and basil leaves in the dish like roof tiles.
Bake:
  1. Season everything with salt and pepper, drizzle with the remaining oil, and sprinkle with grated cheese. Bake in the hot oven (Gas mark 3 / 180°C fan) for about 55 minutes until golden and bubbling.

Serving Suggestions

Serve this rustic bake straight from the oven with a fresh green salad or a spoonful of sour cream. It’s a complete meal full of homely warmth and Mediterranean aroma – ideal for a family dinner or cosy Sunday lunch.

💡 Grandma’s Secret Tip

If you buy basil or parsley in large bunches, place the unused stems in a glass of water like flowers. Cover the glass with a plastic freezer bag, seal it, and store it in the fridge — this keeps herbs fresh for several days.

Serving Ideas

This casserole is perfect just as it is, but you can also serve it with a fresh cucumber salad, a spoonful of crème fraîche, or a light garlic dip. If you have guests, add a simple green side salad and a chilled glass of white wine — it instantly turns into a dinner-party favourite.

For a vegetarian version, swap the meat for sautéed mushrooms and a touch of smoked paprika for depth. You’ll still get all the lovely layers and that golden cheese crust everyone loves.
